We love using our White Sonora for pancakes, muffins, tortillas, and other quick breads. It makes wonderful flaky pie crusts as well. White Sonora wheat is one of the oldest-grown wheat in North America. It was thought to be brought to the Sonoran Desert by Padre Lorenzo de Cardenas between 1640 and 1650. This wheat thrived in the semi-arid climate and soon became a food staple for the region’s inhabitants. The wheat was ground and used to make masa for tortillas, and other dishes like pinole and posole. Sold by the pound.
