White Sonora is a soft wheat which means it doesn’t have the gluten structure like high protein hard wheats. So, what can you use It for? We love using our White Sonora for pancakes, muffins, tortillas, and other quick breads. It makes wonderful flaky pie crusts as well. White Sonora wheat is one of the oldest-grown wheat in North America. It was thought to be brought to the Sonoran Desert by Padre Lorenzo de Cardenas between 1640 and 1650. This wheat thrived in the semi-arid climate and soon became a food staple for the region’s inhabitants. The wheat was ground and used to make masa for tortillas, and other dishes like pinole and posole. Sold by the pound.
