At Old Stonehouse, our Kimchi is made with organic produce whenever available. Starting with Napa cabbage, green onion, Daikon radish, ginger, and garlic seasoned with red pepper flakes, sea salt, and whey. Not too much heat, just a little kick. Packed in convenient pint jars.
Whey fermenting, or lacto-fermentation, has many benefits beyond simple preservation. The proliferation of lactobacilli in fermented vegetables enhances their digestibility and increases vitamin levels. Good for the gut!
