Huckleberry Ice Cream Sandwiches

If Jackson Hole was an ice cream, this would be it. A native berry to the area, the huckleberry has become a mainstay in local cuisine. We start with a blend of huckleberries and wild blueberries, which we then wrap in a hug of sweet cream ice cream. Hand-scooped and put between our signature chocolate chip cookies, the resulting sandwich is a little piece of Wyoming heaven. And everything is still made and packed by hand. We dare you to just eat one!  These mini ice-cream sandwiches are sold in a 4-count package.
