Many might be unfamiliar with Curtido or Latin American Sauerkraut but simply put, it’s a Latin American version of the Korean favorite Kimchi.
At Old Stonehouse, our Curtido is made with organic produce whenever available. Green cabbage, onions and carrots flavored with oregano, red pepper flakes, sea salt and whey. Not too much heat but has a little kick. Packed in convenient pint jars.
Whey fermenting, or lacto-fermentation, has many benefits beyond simple preservation. The proliferation of lactobacilli in fermented vegetables enhances their digestibility and increases vitamin levels. Good for the gut!
