The Sigel family began ranching in the Centennial Valley’s Hecht Creek Ranch 15 years ago. Working through cattle production scenarios, Ed Sigel realized there was ‘a better way’ to produce high quality beef at high altitude despite a fierce winter environment. In 2014, his family and a couple of neighbors started a herd of Scottish Highland and Scottish Galloway cattle, animals recognized for generations as producing the most tender and flavorful grass finished beef available – all in an environment suited to their well being, allowing them to ‘age on the hoof’.   This beef is incredibly flavorful and nutritious – lower in fat and cholesterol then fish, pork, chicken and significantly less then commercial beef cuts while being higher in protein.

Ed has begun to cross-breed the cattle, calling the result ‘Highways’. From his research, there are only 2 other ranches in the USA cross-breeding these Scottish cattle. The beef is wonderful. To make this work, the Sigels are tireless stewards of the land. There is a short growing season in the Centennial Valley, at 8,000 feet, and a good portion of the water comes from the spring run-off from the Snowy Range Mountains. The Sigels focus on migration grazing – timing it to coincide with the grass in the paddock coming into peak nutritional value. Nutritious hay is added over winter. All that work means the end product is beautiful meat that is leanly layered with fat throughout, providing exceptional flavor and tenderness.
